Berry, Almond and Coconut cake

How come you can be sitting one minute looking around you thinking how great a day you are having and how much you love the kids, but within a matter of seconds (usually involving screaming/crying and tantrums) you are looking at them like animals you want to rehome! I feel bi-polar lately! (Argh I’ve had enough I can’t wait to get to work tomorrow. Argh I miss my babies I want to be at home with them everyday! Aw you are so gorgeous I could eat you up. Oh my God that crying is doing my head in, I want to claw my own ears off! Aw ur so much fun today. Will you just STOP touching stuff when I said don’t touch!) Oaft.

Is it unreasonable to be mortally wounded by a childs put downs?! This week toddler boy has really pulled out the stops. Aparently my bum is ‘way too big’ to fit on the couch beside him. My belly is ‘all wibble wobble like a bowlful of jelly mummy’. My hair looks ‘like a funny clown’. But the ultimate horror occured around 8am thursday morning. I am still turning red when I think about it. 😢 He has been obsessed with his willy for a while now. And in the bathroom he looks at me and is confused that I don’t have one too. We answer the door to our friendly postman and boy wonder pipes up… ‘my mummy not got a willy.’ pointing to my pyjama clad crotch. Eh haha! Polite laughs all round..but he continues. ‘She got a weely weely hairy monster in there!’ Holy crap. I wanted the ground to swallow me up. I hastily shut the door and vowed to have our mail redirected so we never have to see the postie again!! (Also booked in for a wax pretty pronto! πŸ˜‚πŸ™ˆ)

Keeping him out of mischief

What a week. A whole 4 days of ‘man flu’hit our household where I was working 12 hours of the day, wiping up snot and sick for 11hours, and if I was lucky; getting to sleep for an hour before doing it all over again. The baby is going through a clingy phase and wants to be attatched to me constantly. Toddler boy seems to have entered a competition to see whats the worst chaos he can cause in the shortest time possible! Best was him ahouting ‘Fire!’ While I was in the toilet. I comw hurtling out, fear gurgling in my stomach. No smoke. Whats going on. He is standing in the livingroom with all his toys in a pile spraying a can of carpet cleaning mousse about telling me he is Fireman Sam. Our little arsonist!

Moan, moan, moan! Wow what I’d give to have more patience!

And so to baking! Β This weeks bakes.

Malteser Fridge Cake

Malteser Fridge Cake

200g unsalted butter

400g chocolate (dark or milk)

5tbsp syrup (maple or golden)

400g digestive biscuits

220g maltesers

75g mini marshmallows

Line your chosen dish with greaseproof paper. You can use a pirex dish, baking tin, basically anything you’ve got. The size of dish you use will determine how thick your traybake will be and it’s a personal preference.

Melt butter, chocolate and syrup in a bowl over a pan of boiling water. Put to the side to cool. Meanwhile..

Crush digestive biscuits to fine crumbs.

Add Maltesers and marshmallows to the biscuit crumbs.

Pour the chocolate mix over it all and stir quickly to coat everything.

Pour into your baking pan and spread out. I like to rip a piece of baking paper and place over the top to squash it all down.

Refridgerate. Only takes about 2hours to set then you can take it out and slice it up. I dust mine with icing sugar but you could drizzle with while choc or leave plain.


Fresh berries

Berry, Almond and Coconut Crumble Cake.

250g SR Flour

70g ground almonds

200g softened unsalted butter

200g caster sugar

70g dedicated coconut

2 eggs

25og raspberries and blueberries.

Oven 180Β°c

Prepare a baking tin with greaseproof paper Β , I used an 8inch round casserole dish but you can put it in anything.

Mix butter, flour, sugar and almonds. Rubbing it all in until it looks like breadcrumbs.

Remove 100g mix and set aside.

Add two eggs to the big lot of mix and stir in.

Pour into baking tin and spread out.

Add half the fruit to top.

Add coconut to reserved mix and stir together. Use this to top the fruit.

Put in oven for 40min

Sprinkle the rest of the fruit over the top and bake for 15min.

Let it cool in the tin before cutting into slices.

So this was how I overcome my blushes ..baking! I have a lovely catch up with some mummy friends tonight..there might be gin involved. After all baking doesn’t solve everything!

  6. Totally relate to the everchanging landscape of parenting. Tantrums appear out of nowhere ( even now with my 8 and 10 year old!) and between my hormones, husbands depression and general stress, we seem to go from giggling to grumping and back again multiple times a day. Thank god for chocolate!!

    But of course the good moments make it all better! You’re doing great!
